Dr. Charles Feldman, is an Associate Professor in the Health and Nutrition Sciences department at Montclair State University, specializing in food systems. In addition to many years industry experience, Dr. Feldman has many publications, and has given many workshops and international scholarly presentations on topics spanning the culinary field, including: quantity food production, food history, nutrition, food safety, international cuisine, and menu development.
