N2 - Artificial Intelligence (AI) is an increasingly important topic across many disciplines, impacting industries and social institutions beyond traditional STEM fields. As AI becomes a part of daily life, it is crucial to introduce AI concepts to non-STEM students. This paper discusses an interdisciplinary approach to teaching AI at Rockland Community College, a two-year institution within the State University of New York (SUNY) system. Our curriculum integrates AI literacy into general education requirements, allowing students to fulfill the Natural Science General Education requirement. A central focus is the application of AI in analyzing solar weather patterns using low and no-code tools. We explore pedagogical strategies, course design, and student engagement techniques to make AI accessible and applicable across various fields.
